Quick question, is the factory standard exhaust on a Mk3 a sectional system? or is it a 'one piece' back from the catalytic converter. The only reason I ask without getting down and under the car is I found this image on Automotive Online which appears to show it as a sectional system??

And does anyone have a rough estimate on replacement cost from Blue Oval, I assume a stainless system would most likely be a more economic option to factory replacement.

If it's like the Mk2 I believe it's not entirely sectional, but pieces are available separately.

One piece from factory, they have to be cut off.

As above they might look sectional but they are one piece from the cat back. Which is why in your diagram you have the swaged ends with clamps as you would have to be careful where you cut the original system to fit new pieces. Or just go for the stainless option - which is sectional usually!
